Olive Tapenade is a wonderful fresh spread or salad dressing or pasta sauce. It is unique rich tasting dressing that is sure to get rave reviews.
Spread: Rinse olives, put in blender, add capers, lemon juice, parsley, thyme, Dijon, garlic, crushed red pepper, olive oil and pepper. Blend until nearly smooth. Serve with crackers or pita bread.
Dressing: Take spread, add in late harvest vinegar and drizzle in oil while blending. Salt and pepper to taste. Add water as needed. Serve over salad.
Sauce: Rough dice shallots and garlic and saute until caramelized. Add white wine to pot and cook on low heat until reduce by one half. Add dressing and cream and heat until boiling. Turn off heat and strain through strainer. Switch to clean pot and add slurry (cornstarch and water). Cook for 2 minutes then serve over chicken or pasta.
